Mineral oil hydrocarbons (MOH) can get into food through packaging, lubricants or production aids and are therefore the focus of investigations. They include saturated (MOSH) and aromatic (MOAH) compounds, while highly purified mineral oils (MORE) only contain MOSH. Substances such as POSH from plastics or PAO from synthetic oils can also migrate, which is why efforts are being made to avoid them.
